CELLARS

Originally the wine cellars were found not only underneath the château itself, but also in the individual vineyards. Today the total harvest is processed in the cellars below the castle situated on the right bank of the river Elbe. The grapes are gently pressed in a modern pneumatic press. Most of the white wine production is carried out in stainless steel tanks. Red wines are matured in wooden barrels located in the stone cellars. The wine made from noble grape varieties such as Pinot Noir and Saint Laurent undergo malo-lactic fermentation in Bordeaux barriques made of new oak with capacity of 225 litres. Wine at Château Mělník is made in several different styles and is particularly appreciated for its wide variety of matching combinations in the sphere of gastronomy. All wines are dry (without residual sugar) and are bottled in traditional inkpot-shaped bottles. A speciality is a wine called Barrique made from the best fruit of the noble black grape varieties. The Riesling grapes are used for the production of sparkling wine by the traditional method.
